Thanks Tim and Rich!! I followed the suggested process at http://www.macosxhints.com/article.php?story=20050706181449478 which worked out quite well. While Entourage has its benefits, I am using Mail as my primary email app for the time being. It just seems to give me fewer hassles.

I'm a mail.app guy myself, wrute the text you want for your sig in another app, or in a mail message itself, customise it to suit, then copy and paste it into the sig area under prefs.

Here's a copy of tricks you could try: one to add a graphic and the other to insert an HTML sig into Mail.app
